During the hot summer months I find myself wanting lighter lunch and dinner options. However, having the same salad over and over can become boring. I’m sharing 10 unique summer salad recipes with you today.

It doesn’t matter if you work from home or out of the home, a garden salad is not going to give you enough energy to make it through the day. You need a salad with protein and healthy fats in order to make you feel fuller. Adding fruits to your salad can make it hydrating and refreshing.

Southwest Salads always pack a little punch. I love the kick the chicken in this salad has. I use plain greek yogurt for the dressing instead of sour cream and the dressing matches the salad well. If you are not a fan of Cilantro like me, you can try any southwest dressing in your fridge.

Easy Summer Salads

To save on time for packing a healthy summer salad for lunch consider cooking a couple extra chicken breasts at dinner one night. With the large size of most chicken breasts you can easily slice those two extras up into 4 servings to add to salads.

Another helpful tip is to pack your salad dressing in a separate container so your salad isn’t sitting in it for several hours or overnight. It helps to keep your salad crisp instead of soggy.
